Valentine's Day is the perfect excuse to bake yummy treats! One of the cutest and most fun treats to make with your little ones this Valentine's Day are homemade cupcakes. And not just ordinary cupcakes from a box, but moist, "made with love", chocolate cupcakes! It's a fun, yet can get a little messy, activity all kids will want to take part in. Especially when it comes to decorating and licking the frosting bowl clean!
Every time there is a birthday, holiday or fun event we always say we are going to jump on Pinterest and make something new... It NEVER happens!! We always end up going back to this same recipe because it is that good!! And super easy!
This year I happened to find a Valentine's cupcake set at my local Marshall's that added the perfect flirty touch, as well as large heart candies and sprinkles to add to the top, which I found at Target. The decorating gives your little ones a chance to get creative. It is so much more fun and thoughtful to bring a treat to friends, family, into the classroom, etc. that you put thought and time into, while had fun baking together!
Now get baking, invite the neighbor kids over, enjoy a cupcake and set up a mini Valentine's Day party in your AirFort!
Deep Dark Chocolate Cupcakes!
- 2 cups sugar
- 1 3/4 cups all-purpose flour
- 3/4 cup cocoa powder Hershey's or Valrhona (My favorite! Makes a huge difference with the taste. You can find it here.)
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp. vanilla extract
- 1 cup boiling water
Buttercream Frosting Ingredients:
- 6 tbsp. butter softened
- 2 2/3 cups powdered sugar
- 1/2 cup cocoa powder Hershey's or Valrhona (My favorite! Makes a huge difference in taste You can find it here.)
- 1/3 cup milk
- 1 tsp. vanilla extract
Heat oven to 350 degrees. Place cupcake holders inside of cupcake pan.
In a large mixer bowl (cutest one for the occasion here), stir together sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, milk, oil and vanilla; beat o medium speed of electric mixer for 2 minutes.
Remove from mixer; stir in boiling water (batter will be thin, but that what ends up giving its moisture). Pour batter into prepared pans.
Bake 25-35 minutes until wooden pick inserted in center comes out clean. While cupcakes are baking begin preparing buttercream frosting.
Cool for 10 minutes on wire racks.
Buttercream Frosting Instructions:
In small mixer bowl, beat butter. Add powdered sugar and cocoa alternately with milk; beat to spreading consistency (additional milk may be needed). Blend in vanilla.
Do not frost cupcakes until completely cooled!! Then sprinkle with love!
