Easter is one of those happy holidays full of pastel colors, pretty flowers, bunny ears and of course yummy treats!  These Easter Egg Macaroon Nests have been a  huge hit at our Easter festivities, especially with all those coconut lovers! 

Easter Egg Macaroon Nests are a festive treat to make with the kids to bring to Easter brunch, into the classroom {especially if you are looking to be the new teachers pet} or an afternoon Easter treat in the AirFort ;)

They are almost too cute to eat...almost!

Easter Egg Macaroon Nests Recipe

Ingredients:

 Instructions:

 1. Preheat oven to 350 degrees. Using an electric mixer, beat butter, sugar and salt. {Williams Sonoma has the cutest pink Kitchen Aid Mixer. Perfect for Easter!}

2. Add eggs one at a time until mixed thoroughly. Mix in coconut.

3. Using a scooper {my favorite is an ice cream scooper to create the same sizes} roll into even balls and place on your cookie sheet. Using your thumb, indent balls into the shape of a birds nest.

4. Bake for 20-25 minutes or until golden brown {I baked mine a little too long but they still tasted delicious!}

5. Once completely cooled, spoon a little Nutella into each "nest" and top with 3 mini chocolate eggs

6. Enjoy!

Warning: Too many Macaroon Nests will cause a tummy ache! But trust me it's worth it :)

Makes about 15 servings.
